In follow up to our Fab Hola Post , here is the recipe for E-Trender Angela's black bean, corn and avocado salsa.
1 (11 ounce) can whole kernel corn
1 (15 ounce) can black beans rinsed and drained
2 cups chopped seeded tomato
1 cup sliced peeled avocado
1/2 cup chopped red or green onion
1/2 cup diced red and yellow peppers
2 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
1/8 teaspoon of salt
Lime wedges (optional)
Ingredients in a medium bowl.
Chill for about a half hour before serving.
Garnish with lime wedges if desired!
Serve with your favorite tortilla chips!
