St. Patrick's Day is right around the corner and we wanted to share this easy rainbow cupcake "how to" with you!
First we need to create some chocolate gold coins which represent a pot of gold at the end of our cupcake rainbow! How sweet!
Chocolate coin molds are available at your local candy making supply store. Simply fill the coin mold with chocolate and cool.
Dust each coin with gold luster dust which can be purchased at your local candy supply store.
Now for the rainbow...
Mix up your favorite white cake mix (box or scratch).
Next - divide the white cake mix in six equal parts and place the following food coloring drops in each individual bowl...
Purple - 9 red and 6 blue drops
Blue - 12 drops
Green - 12 drops
Yellow - 12 drops
Red - 18 drops
Orange - 12 yellow and 4 red drops
Mix each color of the rainbow.
Line 16 muffin pan wells with baking cups (use white cupcake liners). Evenly distribute the purple batter among the cups, then the blue, and so on, following the order shown above. As you go, gently spread each layer of batter with the back of a spoon to cover the color underneath.
Bake the cupcakes according to the cake recipe used for the rainbow cupcakes and let cool.
Frost the rainbow cupcakes with your favorite vanilla icing and add green sprinkles.
Top with gold chocolate coins.
These cupcakes would also be perfect for birthday parties and other colorful celebrations!
